Hotel restaurant gives Nantes visitors a gourmet dining experience
Experience authentic and elegant French cuisine in a historic setting at L’Assise, located in the former courtroom of the Palais de Justice. Le Preambule Bar serves creative mixed drinks, appetisers, and desserts in a colourful, modern atmosphere punctuated with the building’s original columns. Once a month the hotel hosts a special Sunday brunch with visits by guest artists who display and discuss their work.
Jean Philippe Nuel redesigned the Palais de Justice courtroom to create this unique hotel restaurant in Nantes. The trial judge section has been converted into a wine cellar, while the upper walls have been turned into a projection screen to add a new edge to this historic space. Executive Chef Frederic Laval combines regional tradition and modern technique to create sophisticated and original French dishes.
