Executive Chef Oswin Ribeiro and his team have been working hard to re-invent the art of tea-taking at the Bistro Fax Restaurant & Bar and have launched a brand new Sydney High Tea in the style of grand British tradition. Our Sydney High Tea is perfect for social gatherings, birthdays or just a superb distraction from the city's hustle and bustle!

Enjoy the elegant atmosphere and sink into plush lounge chairs, awash with natural light from the high heritage windows. Relish an exquisite array of sweet and savoury finger food classics, such as the cucumber sandwich, beef and cress, curry puffs, classic scones or strawberry swiss rolls - all presented in the style of grand British tradition on a silver tiered stand. Our delicacies are served with your choice of Twinings Tea or a glass of sparkling wine.

Meet Executive Chef Oswin Ribeiro
Born in the hyper City of Mumbai, Oswin never thought he would be the Executive Chef of one of Sydney’s best known landmark hotels when he grew up!

Today, he is running the kitchen at our very own award-winning Bistro Fax Restaurant & Bar. With 15 chefs working with him, a variety of menus to prepare each day and a schedule of 6 a.m. to 6 p.m. each day, there is never a dull moment in Oz's life.
